MY FAVE preworkout meal- Carrot Muffins | recipes

Child approved, momma obsessed, and one of my most favorite pre workout to eat, every morning. Okay, even on rest days, I want these.

Let me preface this, I have not always been a person to eat prior to working out. But, these wonderful muffins have forever changed my heart and mind. I now eat a "preworkout meal" before working out in the mornings, if it is not carrot muffins, I love whole wheat or whole grain english muffins. likethese. 

There is more to the story, as to why I eat before working out.

why I eat before working out

It began over a year and a half ago. 

I took my workout to the gym before work. I had the entire workout planned out, and I wanted to hit so many miles on the treadmill (I was trying to hang with my 100 mile goal, you can read more about that here).

I was almost done with my workout and began feeling so bad. 

I felt as though I was having a full on panic attack. Nauseated, my kidneys hurt, I was sweaty but a new sweat, like a catecholamine release. I got myself ready for work. Got breakfast as soon as I got to work, and a sprite. (I know, a sprite. How healthy? But, I just can't kick them- if you have any suggestions as to how, send them my way!). 

That feeling of like I was going to die, did not pass. And usually after I ate, the bad feelings would go away after thirty minutes or so. 

I over road the glucometer at the nurse's station, and took my own sugar. Mind you, I am not a diabetic, nor am I borderline. 

My sugar was 60. My sugar was 60, after I ate foods high in carbs and protein. 

Me not eating before my workout, before an extensive run, bottomed my sugar out. God only knows how low it was before the food. 

I was allowed to go home after my clinical manager made sure my sugar was coming up. I honestly just felt soooo, so bad. I napped the rest of the day.

I began my search for healthy pre-workout food options.

That is where I found these glorious little treats. 

I began following another a fitness coach there and onInstagram, and she kept showing her morning routine, so I made my first batch. They were not as pretty as I hoped, but I was hooked. 

I have found a few tricks to getting them prettier. (We eat with our eyes first, so that is important to me! )

TRICKS

  • Don't overfill your measuring cup carrots. If you want to double the recipe, fine. But, keep the measuring cup level. Overfilling the amount of carrots could make the muffins turn out mushy. You are going for spongey, cake like. 
  • Kodiak Cake Protein Oatmeal. We love anything Kodiak Cakes at our house- muffins, waffles, and now, oatmeal. This adds extra protein into your muffins. Protein helps you create lean muscles, you want this. I will link them below, order them, sis!
  • Upgrade to a silicone muffin pan. They are non-stick, they are easy to get the muffin out of, and since they are non stick, they are easy to clean up. Also, you will have to put the muffin pan on a sheet pan, to transport into the oven; I mean, it is silicone, so it is flimsy. *While writing this post, I found a great option that is reinforced, I have not tried it personally, but linked it anyways! (the white)
  • Top with Peanut Butter. This is a very important step. Trust me. Just drizzle or spread a small amount of your favorite peanut butter over the top of each muffin. You can have two at a time. I will also tag my two favorite PBs. We love PB at our house.
